Strawberry Bellini ice

They smell like Summer and I can not resist. Strawberries. Who would want to pass on ice cream? A few weeks ago I was at one of these street food markets and someone offered homemade popsicles. Really tasty. To make it suitable for a party I created a own version of this lollipop ice. I used strawberries, sparkling wine and tarragon and created a Bellini ice. Delicious I tell you. I don’t know if they are suitable for children, because I’m not sure if all the alcohol evaporates during boiling. But that’s ok, so I don’t have to share the ice :-)
