  • 1 14-oz can red beans (rinsed and drained)

  • 1 Medium shallot (chopped)
  • 1 teaspoon minced onion
  • 1 teaspoon garlic paste
  • 1/2 cup bread crumbs or panko (plus more for coating)
  • 1 tablespoon olive oil
  • sliced avocado
  • spring mix lettuce
  • 4 Slices muenster cheese
  • 4 kaiser rolls

Recipe Description

This one was delicious and I will say this is not a quick & easy weeknight meal unless you cook the sweet potatoes the night before. They take about an hour in the oven at 400 or you can do stove top in Platinum like I did, which takes less time however you need to chop your potatoes in 4ths or 8ths to do so. Topped with roasted jalapeño, this one was a hit.
