  1. Thread fruit onto skewers and pat dry completely.

  2. In a saucepan, boil sugar and water (don’t stir) until it reaches 300°F (hard crack stage).

  3. Quickly dip each skewer into the syrup, coat completely, then lay on parchment to cool.
