- 3 cups carrot, shredded, (squeezed of any juice)
- ½ cup onion, finely chopped
- ½ cup fresh Italian parsley, chopped
- 2 flax eggs (or substitute 2 chicken eggs, if not vegan)
- 1 teaspoon salt
- ½ teaspoon cumin
- 1 teaspoon teaspoon turmeric
- 2 tablespoons of coconut oil + more for cooking (you can substitute butter, if preferred)
- optional:
- 2 cloves of garlic, minced
- more salt to taste
- fresh pepper to taste
