Ingredients
- 4-5 oz of carrots (approx. 2 medium carrots), cut into thin fries (or use baby carrots)
- 2 Tablespoons coconut oil, warmed
- 1 Tablespoon cinnamon powder
- 1 teaspoon ginger powder (optional)
- Dash of salt
Recipe Description
When you’re on the Paleo autoimmune protocol (AIP), you can’t have nightshades like potatoes. But fries don’t have to be off the table…
7 Types of AIP Fries
It’s actually pretty easy to make AIP fries. You can use a variety of vegetables like the following:
- Carrots
- Parsnips
- Swedes
- Zucchini
- Sweet Potato or Yam
- Yuca
- Celery Root
Just cut into “fries” and then toss with salt and some form of AIP-friendly cooking oil (like olive oil, avocado oil, coconut oil, lard, tallow). Then bake on high heat until crispy to your liking.
Recipe Directions
- Preheat oven to 425 F (220 C).
- If your carrots are cold (e.g., stored in the fridge), then warm them to room temperature by placing them in the oven. This prevents the coconut oil from solidifying.
- Toss with coconut oil and cinnamon and dash of salt.
- Spread onto a baking tray lined with parchment paper.
- Bake for 15-25 minutes until fries are softened/crispy to your liking.
- Sprinkle more cinnamon on top and serve.
