When you’re on the Paleo autoimmune protocol (AIP), you can’t have nightshades like potatoes. But fries don’t have to be off the table…

7 Types of AIP Fries

It’s actually pretty easy to make AIP fries. You can use a variety of vegetables like the following:

 

  1. Carrots
  2. Parsnips
  3. Swedes
  4. Zucchini
  5. Sweet Potato or Yam
  6. Yuca
  7. Celery Root

Just cut into “fries” and then toss with salt and some form of AIP-friendly cooking oil (like olive oil, avocado oil, coconut oil, lard, tallow). Then bake on high heat until crispy to your liking.

Recipe Directions

  • Preheat oven to 425 F (220 C).
  • If your carrots are cold (e.g., stored in the fridge), then warm them to room temperature by placing them in the oven. This prevents the coconut oil from solidifying.
  • Toss with coconut oil and cinnamon and dash of salt.
  • Spread onto a baking tray lined with parchment paper.
  • Bake for 15-25 minutes until fries are softened/crispy to your liking.
  • Sprinkle more cinnamon on top and serve.
