Health Benefits of Leeks
Like onions, leeks have a variety of vitamins and nutrients that are essential to good health.
Leeks are a great source of vitamin K, which is essential to blood clotting and good bone health. They are also a good source of manganese, copper, vitamin B6, iron, folate and vitamin C.
Leeks also contain the lesser-known flavonoid kaempferol, which protects blood vessels.
While there hasn’t been a lot of research done on leeks, they likely share a lot of the health benefits of other allium vegetables such as onion and garlic.
Recipe Directions
- Preheat oven to 400F (200C).
- Toss the sweet potatoes in the olive oil, rosemary and thyme.
- Spread on a lined baking tray and sprinkle some salt on top. Bake for 30 minutes in the oven.
- Carefully take out from the oven and turn the sweet potatoes over. Spread the chopped leeks on the baking tray as well.
- Bake in oven for another 20 minutes.
