- 1 pound ground beef
- 1 pound Sweet Italian Sausage
- 6 peppers ( any color)
- 3 cloves garlic, pressed
- 1 onion, chopped
- 2 cups cooked Basmati Rice
- 1 can Mild Rotel
- 1 can Diced Tomatoes
- 3 cups Cheddar Cheese, shredded
- 2 Tablespoons fresh Parsley, chopped
- ½ teaspoon Kosher Salt
- ½ teaspoon freshly ground pepper
- EVOO
Recipe Description
These are the best Beefy cheesy rice and veggie filled stuffed peppers. Easy to make and a family favorite! Make with that left over rice that you have in the fridge! Sharp Cheddar Cheese makes them cheesy perfect! Serve with a side salad for the perfect dinner. I used my large peppers from my vegetable garden, hubs could eat a whole one no problem!
