Ingredients
- 16 ounces canned yellow corn, drained
- 1 cup dry black beans, rinsed soaked and cooked (can substitute canned)
- 3 medium roma tomatoes, chopped
- 1/2 large red onion, chopped
- 1/2 fresh jalapeƱo pepper, finely chopped
- 3 cloves garlic, finely chopped
- juice of 2 fresh limes
- 1 large bunch cilantro, stems removed & chopped
- dash of your favorite hot sauce
Recipe Description
Fresh, chunky and colorful. This salsa will please the whole crowd with it’s fresh flavor. This salsa is requested by family and friends wherever I go. It’s good on tortilla chips and also makes a flavorful topping to grilled salmon or chicken. Try it with your tacos too. I go heavy on the cilantro so if you are not a big fan, use about half what the recipe calls for.
