- 2 tablespoons olive oil

- 1 blood orange, sliced into rounds
- 1/3 cup blood orange juice
- 1 teaspoon sugar
- 4 tablespoons butter
- 2 tablespoons red wine
- 1/4 cup capers
Recipe Description
Have you ever heard of the fish Cobia? It’s a favorite of mine when I can find it fresh. It is delicious with citrus flavors, and I’ve added a squeeze of blood orange juice and capers to this healthy dinner.
For this recipe I’ve created a pan sauce from freshly squeezed blood oranges and tangy capers.
