- 3,5 oz butter
- 3 eggs
- 3,5 oz sugar
- 4 oz flour
- 1 tsp baking powder
- 4 tsp cocoa powder
- CREAM:
- 9 oz mascarpone
- 14 oz curd
- 9 big chocolate marshmallows (one box)
- TOPPING:
- 5 oz currants
- 10 small strawberries
- 10 raspberries
- 10 blackberries

Certainly one of my loveliest childhood memories that I can connect with food is this chocolate marshmallow cake. Simply tastes like children’s birthday party. Hmmmm ….
Whether my brother or me, no matter who’s birthday could be glad to eat this cake, my favorite cake. My mom mixed these sweet mandarins from the can into the cream instead of currants, which I use. That’s pretty tasty as these small chambers spread in cake and almost burst in the mouth and the sweet freshness reveal. In my version I replace them with currants, which are all from my garden.
I think that’s really great, because you know where they’re from and also I am always happy when I walk through the garden and can reap something homegrown. Currants and blackberries are the only berries that have a chance to get into my freezer because I’ve quite a lot of them in my garden.
And that’s why I could thaw them today and pimp my cake.
