Ingredients
- 1 1/2 # Chorizo
- 3 Garlic cloves, thinly sliced
- 1 Rosemary, fresh w/leaves removed
- 3/4 c Red wine
- 5 Roma tomatos, seeded and diced
- 1 t light brown sugar
- S & P, to taste
- Homemade parpadell pasta
- Fresh mozzarella
Recipe Description
Slow cooked bolognese flavor in a quick and easy recipe. Flavorful and fresh tasting with some spice. Simple and easy prep can be done ahead of time and cooked in 20 minutes when ready to eat.
Serve over homemade pasta and fresh mozzarella for a full meal.
Wonderful for a romantic dinner or for a family.
Recipe Directions
Brown chorizo in saute pan.
Add sliced garlic and rosemary and cook until fragrant.
Deglaze pan with red wine. Add tomatos and reduce slightly.
Serve over homemade pasta and top with fresh torn mozzarella.
