- 1 bag cole slaw mix
- 1 quarter white onion
- 2 garlic cloves
- 1 teaspoon white sugar
- 3/4 teaspoon Kosher Salt
- 1/4 cup peanut butter
- 2 tablespoons honey
- 2 tablespoons lite soy sauce
- 1 tablespoon sesame oil
- 2 tablespoon rice wine vinegar
- crushed peanuts and chopped chives for topping

You know those fantastic Chinese Chicken Salads with the Ramen Noodles and creamy peanut butter dressing? Maybe you’ve had it at a Potluck or Picnic. Perhaps a Summer BBQ? Now that I think about it, I believe my Grandma Gloria introduced me to the dish . An oldie but goody and totally yummy, don’t ya think? Well, I thought it would be fun to recreate the salad a bit lighter and vegetarian while still maintaining it’s authentic crunchy integrity. Colorful, tangy and light. The peanuts add a nice finish plus pop of protein that will keep you satiated and happy!
