Ingredients
- 2 c long grain rice
- 4 c broth of your choice
- 1-1.5 tsp curry powder
- 1 tsp salt
- 1 lb ground beef
- 2 tsp olive oil
- 16 oz frozen mixed vegetables
- 3 cloves garlic, minced
- 6 tbsp unsalted butter
- 1ΒΌ c pine nuts or slivered almonds
- salt and pepper to taste
Recipe Description
This childhood favorite of mine was actually my mother’s very frugal way to feed a large family! A casserole without cream, or cheese, cuts costs and calories but still has a lot of flavor thanks to a healthy dose of vegetables and ground beef, and browned butter toasted nuts. This was a perfect dish for everything from weeknight dinners, to family get togethers, and pot luck meals.
