Ingredients
- 1 tsp. sesame oil
- 1 tbsp. extra virgin olive oil
- 1 cup matchstick carrots
- 2 jalapeños, seeded and chopped
- 3 green onions, white and green parts chopped
- 3-4 cloves garlic, minced or pressed
- 1 tbsp. fresh ginger, grated
- 4 cups cooked, chilled brown rice
- 3 eggs
- 3 tbsp. mirin
- 3 tablespoons lower-sodium soy sauce
- 1 tsp. crushed red pepper flakes (more or less depending on taste)
- sea salt and fresh ground pepper, to taste
- 3 tbsp. cilantro, chopped

Easy Spicy Unfried Rice is healthy recipe makeover for the classic take-out favorite with all the classic flavors. Brown rice, less oil and more vegetables make this side dish more nutritious! So something that I do like to do is to make what I call Chinese “take-out fake-out.” That is where I recreate our favorite dishes at home where I can control what goes into it!
