Ingredients
- 4 small eggplant, ends trimmed & diced
- 6 ounces packed-in-olive-oil jarred sun dried tomatoes
- 3 cloves roasted garlic
- 4 Tablespoons tomato paste
- salt & pepper to taste
- crushed red pepper flakes to taste
Recipe Description
So good on garlic toasts or gourmet cracker. I toasted some sourdough slices and put some garlic cheese on it. Then, I added a dollop of the spread on top and it made for a tasty game day snack. The flavor of the sun dried tomatoes and eggplant as amazing. It was quick to make too so you can spend more time with your party guests and less time stressing over the stove.
