I don’t think I can name one person that I know who doesn’t love fresh mozzarella cheese! Now you can make it any time you get the craving and with all those ripe, juicy summer tomatoes exploding out of the garden it’s the perfect pairing. Slice both the tomatoes and the cheese a little thick, layer them on a platter and drizzle with some olive oil, a little balsamic vinegar and sprinkle with fresh basil………..PERFECT!
