Recipe Description
This Healthy Mexican Casserole allows you to enjoy your favorite Mexican flavors in a healthy way! But how? First, I swapped the white rice for quinoa. Quinoa is full of protein (is naturally gluten free), but still gives you that carby yumminess we all love about Mexican food. Next, I decided to use lean ground turkey. Healthy, lean, and full of protein. Then I loaded up the veggies: onion, jalapeno, 4 whole bell peppers, and a little garlic.
