- 1 CUP Garbanzo Beans (drained)
- 1/2 CUP Blue Cheese or Feta
- 2 Lemons (juiced)
- 3 TBSP Olive Oil
- 1 TSP Sherry Vinegar
- 1/2 CUP Roasted Red Pepper (thinly sliced)
- 1/4 CUP Kalamata Olives (pitted)
- 1 Red Onion (thinly sliced)
- 1/4 CUP Sun Dried Tomatoes
- 1 Zucchini (cubed)

Recipe Description
