- 1 cup chicken stock, vegetable stock or water
- 9 ounces frozen peas, defrosted
- Garnish with fresh mint
Recipe Description
Indian spiced peas has onions and red bell peppers. There’s no easier (or healthier) way to add a lot of flavor to dishes than the use of spices. I always have a variety frozen vegetables in my freezer. This way, I always know that I have fresh vegetables available to me to add to soups, stews or just to cook up as side dish. Peas being my favorite frozen vegetable, I like to take them to the next level by adding healthy ingredients, spices and herbs. I sautéed onions and red peppers with Indian spices like cumin, coriander and garam masala. I then added frozen peas and chicken stock and simmered until cooked. I finished the dish with fresh chopped mint for a extra pop of fresh flavor. This is a great way to change up your usual vegetable dish and stay on track with healthy eating.
