Ingredients
- 2 Tbsp extra virgin olive oil, divided
- 1 lb lean ground beef
- 1 large yellow sweet onion, diced
- 3 - 5 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 1 (14.5 oz) can petite diced tomatoes
- 1 (14.5 oz) can crushed tomatoes
- 2½ Tbsp tomato paste
- 2-3 tsp Italian Seasoning Medley
- 1 tsp granulated sugar
- Salt and freshly ground black pepper, to taste
- 10 lasagna noodles, broken into bite size pieces
- 1¼ cups shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 8 oz ricotta cheese
Recipe Description
This January is one of the coldest I can remember. Sure we’ve had windchills below zero, before,but the actual temperature here hit -5 this week!
This type of weather makes me crave warm, comforting food. Personally I can’t think of anything more warming than soup or comforting than lasagna.
