Ingredients
- ¾ cup olive oil
- pinch of kosher salt, ¼ teaspoon
- pinch of pepper, ¼ teaspoon
- 1 teaspoon of fresh lemon juice or more depending on desired acidity
- 1 teaspoon Dijon mustard
- optional:
- add a little lemon zest to make it extra lemony and zesty
- more salt and pepper to taste, if desired

I rarely buy pre-made salad dressing anymore because making salad dressing in a mason jar is so easy with ingredients that I always have on hand. It’s nice to know you are having a dressing that doesn’t have any added preservatives, added sugar or who knows what else in it! Plus, it’s easy, fresh and flavorful to boot and who doesn’t love shaking a mason jar?
