Ingredients
- 1 cup mayonnaise
- 1 teaspoon Dijon mustard
- 2 tablespoons ketchup
- 2 tablespoons bottled sweet pickle relish
- ¼ cup water
- ¼ teaspoon ground black pepper
- 2 heads iceberg lettuce, cored and cut into 4 wedges per head

My husband, Jay, is not crazy about salads. He does, however, enjoy a wedge salad. Basically a chunk of iceberg lettuce and some dressing. Can you even call that a salad? Typically they are served with ranch or blue cheese dressing but this time I decided to try thousand island. I found this recipe in one of my old Cooking Light magazines and it is a keeper.
The thousand island dressing would also be an AMAZING special sauce for a cheeseburger. It reminds me of In-and-Out Burger sauce. You can serve this wedge with the lettuce and dressing or jazz it up with some bacon and green onion.
