Meatball Quesidillas are probably to date my most ingenious left-over make-over meal! Using left over meatballs and spaghetti sauce to make an entirely different meal for lunches or for dinner, these quesadillas will be a super huge hit with your family.
Add in some creamy ricotta cheese with Italian dried herbs and topped with shredded mozzarella cheese and you are in left-over heaven. The kids will go bonkers over these and you probably will too. They are delicious. Ever so easy to put together in a very short time.
This is a wonderful idea for weeknights, especially during the school year when you do not have not a lot of time to cook. Just make your spaghetti and meatballs over the weekend and then any night during the week this can be a meal you make in a snap.
Italian Sausage would work as well – so it’s time to get making some meatballs and sauce and then make these really delicious and novel Meatball Quesadillas!
