- 1 Double 8 Cattle Company Fullblood Wagyu Sirloin Bavette
- 3/4 CUP Stone Ground Mustard
- 2 Large Shallots (peeled and diced)
- 5 Garlic Cloves (minced)
- 1 CUP White Wine (chef used Pinot Gris)
- 2 TBSP Sugar
- 2 TBSP Fresh Thyme Leaves
- 2 Lemons (juiced, save the juiced fruit)
- 1/2 CUP Olive Oil
- 1/2 CUP Grapeseed Oil
- 2 TSP Kosher Salt
- 1/2 TSP Freshly Ground Black Pepper
- 3 LB Baby Red and Yellow Potatoes (kept whole)
- 1/2 CUP Grapeseed Oil
- 3 SPRIG Thyme
- 2 TBSP Kosher Salt
- 1 TSP Freshly Ground Black Pepper
