- 4 TBSP Soy Sauce (divided)
- 2 TSP Sugar
- 12 OZ Dry Japanese Udon Noodles
- 3 Scallions (sliced thin on a biased cut)
- 1-INCH-PIECE Fresh Ginger (peeled and sliced)
- 1 (5 OZ) PACKAGE Narutomaki Fish Cakes or Fish Balls with Roe (sliced into bite-size pieces)
- 2 TBSP Mirin
- 6 CUP Water
- 1 OZ Kombu (Dried Kelp)
- 1 CUP Katsuobushi (Dried Bonito Flakes)
- 6-8 Dried Shiitake Mushrooms
