- 1 Cup Whole Grain Rice
- 2 Cups Vegetable or Chicken Broth
- 1 Small Zucchini
- 1 Jalapeno
- 1 Clove Garlic
- 1 Cup Broccoli Florets
- To Taste Salt and Pepper
- 1/2 Cup Shredded Sharp Cheddar Cheese
Recipe Description
One Pot Cheesy Rice is loaded with veggies, has a little spice and is cheesy good, too! It makes a great side or a wonderful main meatless dish as well! Adjust the amount of Jalapeno from not to a lot, depending on your taste! I like it spicy so I diced up, two! But however much spice you add this rice will please the entire family and add a little extra veg into the meal at the same time!
