- 3-4 cups pork (left over) - cut into bite sized pieces
- 1 cup homemade pork gravy (or buy a jar)
- 2 peppers - large dice
- 1 large onion - large dice
- 1 tbsp. butter
- 1/2 - 3/4 cup chicken broth or water (to reconstitute gravy if necessary)
- salt and pepper to taste
Nowadays we can’t afford to throw anything away so I like re-creating new dishes from left-overs. This Pork, Peppers and Onions over Rice is my latest way of using some left over pork roast. Well starting with a good homemade gravy from your roast and building flavor from the peppers and onion makes the “sauce” for this ever so delicious.
Start to finish – dinner in under an hour and it’s so FRUGAL and it tastes FABULOUS. Check it out.
