Recipe Description
Colorful, crunchy and full of flavor, this Rainbow Carrot Slaw with Ginger Sesame Dressing is a great dish for a summer barbeque, potluck or picnic.
I love all types of slaws, they are such a great dish for summer and outdoor entertaining. The colorful carrots – all kinds of purples, oranges and yellows – are so pretty in this slaw and the Ginger Sesame Dressing complements their sweetness nicely. Cilantro provides freshness and a nice color contrast. (If you’re not a cilantro fan, green onions or parsley would be a good substitute.)
This flavorful Rainbow Carrot Slaw with Ginger Sesame Dressing can be made ahead of time and keeps well in the refrigerator and is a wonderful dish for a summer barbeque, potluck or picnic.
