  • Favorite Homemade Pizza Crust Recipe or pizza crust mix prepared according to directions
  • 4 Laughing Cow creamy swiss triangles
  • 1/2 pound deli corned beef or pastrami; ask your deli to cut one 1/2\" thick slice of your favorite, rough chop to desired size
  • 1/2 cup diced onion
  • 15 oz can sauerkraut, drained and squeezed dry
  • 6 oz package of finely shredded swiss cheese
  • 1/4 cup Thousand Island dressing

Recipe Description

This recipe is the best combination of your favorite Reuben sandwich and pizza!  I use a thick slice of deli corned beef or pastrami, squeeze-drained sauerkraut, chopped onions, two kinds of swiss cheese, and topped with Thousand Island dressing all piled and baked on a crispy pizza crust.  It's a favorite! 

Recipe Directions

Preheat oven to 450 degrees. 

Prepare pizza crust according to recipe or package direction.  I prebake the crust on a baking stone for 10 minutes.  Upon removing the crust from the oven, place the Laughing Cow triangles on the hot crust, as they soften, spread evenly over the crust.

Top the pizza with the chopped corned beef or pastrami, chopped onion, squeeze-drained sauerkraut, and shredded swiss.  Finish by squeezing Thousand Island dressing over all.

Return to oven and bake for 25 minutes or until cheese is melted and dressing is lightly browned.

Remove from oven and let set for 5 minutes before cutting.  Serve and Enjoy!
