- 1 pound fresh brussel sprouts, stems removed and shaved
- ¼ cup red onion, sliced thinly
- ¼ cup olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- salt and pepper to taste

This recipe was inspired from a side dish I was served at a local restaurant last week. They served thick slices of Parmesan on top of roasted Brussel sprouts, and I loved the combination of flavors. Since it’s still pushing 90 degrees during the day here in Nashville, I wanted to make something light and refreshing, so I decided to shave the Brussel sprouts into a salad and toss them with a simple dressing made from olive oil, apple cider vinegar, honey and Dijon dressing – and add lots of Parmesan, of course ;)
The Parmesan adds a salty, savory flavor that is a perfect complement to the lightness of the salad and dressing. Since it uses no mayonnaise, this would be perfect for any summer gathering or alongside grilled meat for a healthy meal! Enjoy :)
