This shrimp scampi ceviche is easy to make and oh so delicious! Plus, the shrimp scampi has its own seasonings right on it so you don’t have to worry about getting that perfectly right. They taste absolutely delicious! You can also use extra sauce from the shrimp scampi in your ceviche! I love to serve things “mini style” but you can absolutely serve this in a larger bowl, of course.
