Ingredients
- 1 4-5 lb whole chicken, giblets removed
- 8 cups water
- 3 medium leeks, washed and chopped
- 2 medium carrots, peeled and cut into large pieces
- 2 stalks celery, chopped
- 1 medium onion white or yellow, chopped
- 3 cloves garlic, minced
- 2 whole bay leaves
- 1 tbsp dried parsley
- 2 tsp dried thyme
- 2 tsp kosher salt, more or less to taste
- 2 tsp black pepper
- 1 parmesan rind (optional)
Recipe Description
This rich, wholesome chicken soup is the perfect dish for a chilly or busy night. This recipe uses carrots, celery and leeks, but any root vegetables would work well for this soup. You can also add a handful of chopped spinach or kale, or a half cup of rice or egg noodles about an hour before serving.
