  • 1 red bell pepper, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 (15 oz) can Guinness Irish stout (or other dark beer)
  • 2 tablespoons water
  • 2 tablespoons cornstarch
  • shredded cheddar for topping (optional)
  • light sour cream for topping (optional)
  • chopped green onion for topping (optional)
