- 1/4 CUP Ancho Chile Powder
- 1/4 CUP Smoked Paprika
- 1/4 CUP Kosher Salt
- 3 TBSP Granulated Garlic
- 3 TBSP Ground Cumin
- 3 TBSP Ground Coriander
- 2 TBSP Aleppo Pepper
- 2 TBSP Oregano
- 3 TBSP Dark Brown Sugar
- 4 CUP Milk
- 1 Yellow Onion (minced)
- 2 TBSP Butter
- 1 1/2 CUP Polenta
- 3 TBSP Garlic (minced)
- 1 CUP Shredded Parmesan Cheese

- 3/4 CUP Heavy Cream
Recipe Description
Wagyu whole shank is rubbed with smoky spices and dark brown sugar. The shank is braised in stout beer, beef stock, garlic, tomatoes, leeks, shallots, carrots, and thyme.
