Ingredient:

1 pound sirloin, thick cut. bout 3/4 of an inch.
Avocado
Pico de gallo.
Tortillas
Limes
Marinade…

1/2 teaspoon of salt.
1/2 teaspoon of pepper.
1/4 cup of olive oil
1/4 cup of red wine vinegar
Juice from a lime.
1 tablespoon of fresh chopped oregano
1 tablespoon of fresh chopped cilantro.
2 cloves of chopped garlic.
any kind of chilis you want. I used two dried Thai chilis for heat.

Directions:

Mix all the marinade ingredients together and pour over steak. Cover and set aside. Give it a turn every 15 minutes for an hour.

Make the pico de gallo during this time. Diced onions, Diced roma tomatoes, minced jalapeno, lime juice, salt and pepper. Mix together with some diced cilantro.

When you are ready to cook the steak, put a good thick bottomed pan on the stove and get it screaming hot. Pour in a glug of oil, and get it hot.

Place the steak down in the pan and let it cook for about 5 minutes, flip, and cook another 5 minutes. This will give you a good Medium steak. You can adjust the cooking times as needed for your steak temp preference.

Remove steak to a plate when you are ready, and allow to rest for at least five minutes.

I sliced an avocado thinly length wise.

Heat up your tortillas in another pan until they get bubbly and crispy, flip them after about a minute of two. You want them hot with a touch of crispy.

Slice your steak against the grain about 1/4 of an inch thick for each slice. Arrange on the tortillas with your choice of toppings, and hit the some lime juice before you eat.
