Squash from the garden – tons of it and you are tired of making breads and muffins. What to make? Summer Squash Bisque is the answer!
There’s a gentle heat from the cayenne and overall this is one really full-bodied and very flavorful soup. Good vegetables that get pureed so if you have picky kids they won’t even know that it’s good for them.
And, it’s easy to make ~ start to finish in about an hour! It’s also really inexpensive. I’ve listed it can serve 6-8 for a dinner portion. If you decide to use it as a starter course at a dinner party and serve smaller portions, then it’s probably around 8-10 servings.
