Ingredients
- 4 cups yellow squash
- 2 cups baking potatoes
- 1 cup carrots
- 1/2 cup onion
- 4 cups chicken broth
- 1/4 cup heavy cream or half and half
- 3 tbsp. butter
- 3 tbsp. flour
- 1 tsp. kosher salt
- 1/4 tsp. black pepper
- 1/4 tsp. paprika
- 1/8 tsp. cayenne pepper
- 1 pinch nutmeg

There’s a gentle heat from the cayenne and overall this is one really full-bodied and very flavorful soup. Good vegetables that get pureed so if you have picky kids they won’t even know that it’s good for them.
And, it’s easy to make ~ start to finish in about an hour! It’s also really inexpensive. I’ve listed it can serve 6-8 for a dinner portion. If you decide to use it as a starter course at a dinner party and serve smaller portions, then it’s probably around 8-10 servings.
