- 1 red bell pepper, finely chopped
- 4 stalks celery, finely chopped
- 1 small red onion, finely chopped
- 2 large tomatoes, chopped
- 1 bunch cilantro leaves, finely chopped (optional)
- 1/2 cup red wine vinegar
- 1/4 cup olive oil
- 1/4 cup granulated sugar
