- 1 Cup Zucchini, Grated and Patted Dry
- 2 Tablespoons Onion, Minced
- ½ Cup Seasoned Breadcrumbs
- ¼ Cup Ketchup
- 1 Egg
- 1 Teaspoon Kosher Salt
- Freshly Ground Black Pepper
- 2-3 Potatoes, Peeled and Cubed
- 2 Garlic Cloves, Halved
- 2 Tablespoons Fat Free Sour Cream
- 2 Tablespoons Fat Free Chicken Broth
- 1 Tablespoon Skim Milk
- ½ Teaspoon Thyme, Dried
- Kosher Salt and Freshly Ground Pepper, To Taste

Turkey Meatloaf Muffins: Tender and flavorful meatloaf cupcakes topped with garlic thyme mashed potato “frosting”.
When I think of meatloaf I think of heavy food best enjoyed on a cold winter day. I wanted to lighten it up into a dish that is appropriate for summer.
I’ve also included a generous amount of zucchini which our neighbors always bless us with during the summer season from their gardens.
