- 2 Bartlett Pears (small diced into 1/4-inch-wide pieces)
- 3 SPRIG Oregano (leaves removed from stems, leaves minced)
- 3 TBSP Honey
- 3 TBSP Brown Sugar
- 8 Dried Apricots (minced)
- 6 TBSP Apple Cider Vinegar
- 4 PIECE Applewood Smoked Bacon (cooked and minced, reserve bacon fat)
