- 4 ounce Fettucine
- 1 Cup White Beans
- 4 Tbl Vegan Margarine
- 3 cloves Garlic
- 1 Cup Almond Milk
- 1-1/2 tsp Lemon Juice
- 1 Tbl Nutritional Yeast
- 1/16 tsp Salt
- 1/16 tsp Pepper
- 8 ounces Broccoli
- 1 Roma Tomato
- 1/2 Loaf French or Italian Bread
- 1 Tbl Parsley
Recipe Description
Part of our “Vegan on a Budget” series, this is our Alfredo makeover. Using white beans, such as Great Northern, we were able to save on both calories and money. Not only nutritious, but delicious as well! This is White Bean Fettuccine Alfredo with Broccoli and Garlic Bread. A complete meal packed full of protein. You see, as the name implies, this Alfredo is made from Great Northern Beans! Similar in it’s preparation to our Cauliflower Alfredo, this sauce is very smooth and creamy. The beans are very, very mild in taste and take on the other flavors we’ll be adding later.
