Ingredients
- Dough:
- 2/3 cup butter
- 1 cup sugar
- 1 3/8 cup flour
- 12 oz zucchini
- 3 eggs
- 2 limes
- 1 tsp baking natron
- Topping:
- 1 cup cream cheese
- 1/2 cup icing sugar
- 1 lime
- 1 small zucchini
Recipe Description
Zucchini sounds so healthy, doesn’t it? But cake don’t. That’s why the combination works so well. The zucchini has just a little taste of its own but makes the cake wonderful fluffy. And by the way the zucchini colours the cake beautifully green. :)
The cream cheese on top turns this one into a real cake. To make it even more fresh, this cream includes also lime juice and lime zest. Wonderfully fresh, light and delicate sour. I spoted that it’s the best to enjoy the cake on the same day, because it’s so delicious lukewarm.
