• 1 lb boneless chicken breasts mine were frozen
  • 1 C chicken stock or broth
  • 3/4 C caesar dressing
  • 1/4 C freshly chopped parsley
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 -3 C chopped romaine lettuce
  • 1/2 C shredded parmesan cheese
  • 4-6 Flour tortillas

Recipe Description

This recipe is perfect for those days when you forget to take chicken out of the freezer.  Using the Instant Pot allows you to take chicken straight from the freezer and have it ready in under a half hour.  This recipe was originally created for my slow cooker and this is the quicker version, adapted for my Instant Pot.

Step 1

Place chicken and broth in Instant Pot and set timer.

Step 2

Remove chicken and shred.

Step 3

Place chicken back in pot with dressing and seasonings.

Step 4

Place chicken mixture, along with lettuce on a tortilla and roll up
