DESCRIPTION: These AIP apple pork chops are quick, easy, and tasty – perfect for a weeknight supper.

Believe it or not, pork is the world’s most popular meat. When I did a little research, it seemed like a natural progression – humans have been dining on hogs for quite some time.

Pigs have been on the menu for ages. Archaeologists say the pig dates back 40 million years, and pigs were domesticated in China by 4900 B.C.

Hernando de Soto is credited with bringing the first 13 pigs to America in 1539 and starting the country’s love affair with pork. The little herd quickly grew to 700 head and became the object of deadly squabbles with Native Americans.

More recently, in China, there’s been a swine revolution. Where pigs used to be reserved for special occasions, they’ve now become everyday fare.

The Chinese lead the world in pork consumption, followed by the European Union and the United States.

Recipe Directions

  1. Season the pork chops on both sides with salt.
  2. Heat the olive oil in a pan and (using tongs to make it easier), position the chops upright so that fat is in direct contact with the pan, crisping and rendering the fat first and foremost, before placing each pork chop flat on the pan.
  3. Cook for 3-4 minutes on both sides until crispy and golden and sufficiently cooked through.
  4. Once done, simply serve the pork chops with the applesauce and your choice of side salad.
