People have been dining on this delicious fatty fish off the coast of Europe since Palaeolithic times. In the early days of America, Native Americans ate a salmon-rich diet, and European settlers also took to eating the fish.

There was a time when salmon was prevalent in both the Atlantic and Pacific Coasts of America, but the advent of modern canning and food preservation methods led to overfishing and created scarcity.

Today, the majority of commercial salmon is produced at salmon farms.

Recipe Directions

  1. Preheat the oven to 350°F (180°C).
  2. Pat the salmon fillets dry. Wrap bacon around the fillets.
  3. Place fillets onto a roasting tray and drizzle with the olive oil. Bake for 15-20 minutes.
  4. Serve garnished with chopped tarragon and lemon wedges.
