Recipe Description

Cod is a lovely, flaky white fish with mild flavor that is a really good choice for dinner. You can purchase either the “loin” or the fillet. For this dish I chose the loin and topped it with a delicious cracker topping that is filled with fresh herbs and held together with butter.
The cod came out beautifully – cooked to perfection and that herb crust just added such nice flavor and texture to the dish.
Instead of spinning out the same suppers over and over, dare to make something a little different. There’s also a link in the recipe for my homemade tartar sauce which is as good as any you’ll find in seafood restaurants and it’s so simple to make!
Come check out how easy this is to make and it bakes in about 20-22 minutes depending on the thickness of the loin. The thinner filets take a bit less time than that, making an easy and delicious weeknight meal. Served with a baked potato and asparagus it looks and feels and tastes like a restaurant quality meal.
