Ingredients
- 2 bags chopped Romaine
- 2 tomatoes, chopped
- 1 cucumber, chopped
- 1 cup shredded cheddar cheese
- 2 small (lunch size) bags Frito's
- 1 cup Ranch dressing
- 1 cup salsa
- 4 chicken breasts
- 3 tsp chili powder
- 2 tsp season salt
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp onion powder or flakes
- 1-2 Tbsp olive or avocado oil
Recipe Description
This crispy, light main dish salad is perfect when you need a quick dinner that is sure to please both adults and kids a like. It’s a healthy meal but the chips make it enough of a treat that you will look forward to eating it. Make it mild or spicy depending on your family’s preference. This is a recipe I have made many times over, and you will, too.
