So ya, I am back again with one more Cinco de Mayo treat this week. Just can’t help myself, it is one of my favorite food holidays. Really, I wanted to share these little pockets full of fiesta flavors; chicken, cheese, green chilies, and Rotel tomatoes. Finger size food makes me happy and we deserve a little happiness this first week of May. May is my birthday month so it is kinda the best month ever :)
