Ingredients
- 1 T butter
- 1 T olive oil
- 4 boneless pork chops
- 4 C spinach
- 4 oz goat cheese room temperature/softened
- 1/3 C julienne style sun dried tomatoes drained, packed in oil
- ½ C seasoned breadcrumbs
Recipe Description
This is one of those recipes that appears to look difficult but it's actually really easy. All you have to do is cut a pocket into the boneless chop (or have your butcher do it) and stuff it with a mixture of goat cheese and spinach. Then just cook it up. Pairs perfectly with simply seasoned pasta, rice or potato.
