I was born and raised in Texas and I love Mexican food. I wanted to find some healthy options to hit that taste bud for my addiction to this type of food. This healthy buritto is delicious and it doesn't take long to make. Kids love these and it is a great way to get full but eat light. I use all orgnic ingredients and it taste so fresh! Enjoy!
Recipe Directions
I cook my chicken ahead of time and then use it for several recipes. I use chicken breast. I salt and pepper lightly and squeeze fresh lemon juice over it and bake at 350 for 35-40 minutes. I shred the chicken and put it in a container to use for different recipes. It will take 2 large chicken breast for this recipe.
Lay tortilla on flat surface. I put the lettuce on first. I lay a big leaf then next the beans about 2 spoonfuls on leaf. Put in the center of the tortilla. Then layer the rest, sweet corn, avacado, chicken then diced tomatos. Salt and Pepper for taste. Fold each side starting with the bottom flap. Roll up, eat enjoy.
