Ingredients
- 2 onions
- 3 medium carrots
- 2 large potatoes
- 3 Stalks of Celery
- 1/2 head of cabbage
- 2 1/2 cups of spinach leafs
- 1 med clove of garlic minced
- 1/3 cup of oil
- 4 tbsp butter
- 7 beef bouillon cubes
- 7 cups of water
- 16 oz can of diced tomatoes
- 2 8oz cans of tomato sauce
- 16 oz can of red kidney beans
- 16 oz can of Northern White beans
- 1 package of frozen egg noodles
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- 1/4 tsp dry basil
Recipe Description
As the cooler weather has finally started moving in, I thought it would be great to have a good Minestrone Soup for dinner tonight. My mother-in-law makes a killer minestrone so I asked for the recipe and the results were delicious as always!
I hate trying to get my kids to eat veggies, they are like I was growing up, not a fan. Unfortunately. This soup is the perfect “trick” food to get a TON of veggies down them. They emptied their bowls. And loved it. I am sharing this one with you, as it is just too good not to!
